3 lb spare ribs
1 tsp salt
2 tsp brown sugar
1 small clove garlic, crushed
1/4 tsp pepper
2 tsp soy sauce
1 tsp cooking wine
1 Blend all the flavoring ingredients thoroughly together.
2 Pour over spare ribs (which should be left whole).
3 Marinate for 2 hours, turning and basting frequently.
4 Bake ribs on a rack in a baking pan in a slow oven, 325 degrees, for 1-1 1/2
hours, pouring out the fat and basting with the marinate frequently.
5 When cooked, cut into individual ribs and serve with the gravy remaining.
6 Serve accompanied with boiled rice.
