3 oz margarine
4 oz sugar
2 oz parched peanuts, chopped
7 oz flour
1/2 tsp salt
2 tsp baking powder
1/4 tsp bicarbonate of soda
about 9 oz ripe banana, mashed
1 Cream together margarine and sugar.
2 Add eggs and beat well. Add nuts.
3 Sift together flour, salt, baking powder and soda.
4 Add to creamed mixture alternately with banana, beating well for each
5 Pour into a well greased 8-9 inch loaf tin.
6 Bake in a moderate oven, 350 degrees, for about 1 hour or until done.
7 Cool on rack.
