1 large piece of fish
vinegar or lime juice
lime to garnish
1 Scale, wash and trim fish. Tie into shape if necessary.
2 Bring enough water to cover fish to the boil, and add salt and vinegar or
lime juice in the proportion of 1 tablespoon salt and 1/2 teaspoon vinegar
or lime juice to every quart of water.
3 Put in the fish to simmer very gently until cooked. For a large piece of
fish allow 10 minutes for every pound plus 10 minutes. For small pieces
allow a total of 15-20 minutes.
4 Drain well and place on a hot dish.
5 Decorate with slices of lime. Serve with butter or tomato sauce.
Note: The vinegar is used to whiten the fish. It need not be used if cooking dark
