Corn Gems Recipe


2 oz butter or margarine
2 oz sugar
1 egg, beaten
about 1/2 pt milk
4 oz cornmeal
2 oz flour
1 1/2 tsp baking powder
1 tsp grated lime rind
pinch of salt


1 Cream the butter or margarine and sugar. Add the beaten egg, then add
the milk.
2 Sift the dry ingredients together and add to the mixture, with lime rind
and salt.
3 Stir well until smooth then pour mixture to half fill well-greased muffin
4 Bake in a hot oven, 400 degrees, for about 45-60 minutes until golden
5 Split open while hot and spread with jam or jelly. (Or if preferred, use
butter, margarine, cheese or ham.)
