1 lb farine
2 lb fresh fish
2 tbsp chopped celery
1 or 2 wiri-wiri peppers, chopped
juice of 1 lemon or lime, or 2 tbsp vinegar
1 oz margarine
1 oz rice flour
1/2 pt milk
1 Pour some water on the farine and strain away any impurities.
2 Leave farine to swell.
3 Grind celery and pepper.
4 Clean fish and season with the ground celery and pepper, salt,
lemon or lime juice or vinegar. Set aside.
5 Steam fish, keeping the liquor.
6 Remove bones and mash finely with a fork. Make a white sauce
with the margarine, rice flour, milk and reserved fish liquor.
7 Add fish to farine and mix well with white sauce.
8 Place mixture into a greased 1 lb loaf tin and bake in a moderate
oven, 375 degrees.
