French Rolls Recipe


1 oz sugar
6 tbsp warm water
1/2 oz yeast
3 lb plain flour
3 tbsp salt
6 oz margarine
1 1/2 pt milk
3 eggs
2 oz melted butter to glaze


1 Add sugar to the water then sprinkle in the yeast. Leave to rise.
2 Sieve flour and salt.
3 Rub in margarine. Warm the milk ( a finger should be able to stand the
4 Beat eggs and add half the warm milk.
5 Make a well in the center of the flour, add yeast mixture and egg mixture
and mix to a pileable dough, adding more milk as required.
6 Knead well, cut dough in half to make sure there are no bubbles. Put
together and knead.
7 Leave to rise to double its size.
8 Cut into 84 pieces, knead each piece and form into rounds. Leave to rise.
9 Bake in a hot oven, 400 degrees, for 10-15 minutes. Allow to cool, then
glaze with melted butter.
