1 lb ripe but firm mangoes
2-3 tbsp water
small piece of cinnamon stick
1/4 pt milk
1 egg yolk
sugar to taste
2 tbsp cream or evaporated milk
1 Peel and slice mangoes and stew with water and cinnamon. Rub through
2 Make custard, using milk, egg yolk, sugar to taste, and vanilla essence.
Leave to cool.
3 Add the custard to mango puree. Sweeten to taste.
4 Half whip the cream and to it add the fruit and custard mixture.
5 Pour into one bowl or individual bowls. Chill and serve.
Note: Any soft fruit may be used and water may be added where necessary.
Lemon juice and lemon rind may be added to give flavor.
Color should be used when necessary.
