1 lb ripe plantains
1 lb cheese, grated
1/4 pt milk
1 oz flour
pinch of salt and pepper
1 tsp mustard
1 Slice the plantain into even pieces lengthwise.
2 Mix together milk, flour, eggs, salt, pepper and mustard.
3 Cover the bottom of a greased pie dish with a layer of plantain.
Sprinkle on some of the cheese then pour over some of the egg mixture.
4 Sprinkle on some cheese, and repeat the layers of plantain, egg mixture
and cheese until the dish is full.
5 Sprinkle the remainder of the cheese on top.
6 Bake at the top of a moderately hot oven, 375 degrees, for about 7
minutes until cooked.
