2-3 small firm yellow plantains
1 tsp salt
1/2 tsp baking powder to each cup
1 tbsp herbs
1/2 tsp white pepper
1 oz margarine
1 Boil the plantains, peel, then pound or mash them. Put to cool.
2 Add other ingredients and mix well.
3 Shape into cakes 1 1/2 inches in diameter.
4 Fry in smoking hot oil until light brown.
5 Drain on kitchen paper.
Note: 1 tablespoon of sugar may be used instead of salt if a sweet is desired.
Omit the herbs and pepper.
