Rice and Cheese Loaf Recipe


6 oz rice
1 pt water
1-2 cloves garlic
3/4 pt milk
8 oz cheese, grated
mustard to taste
2 eggs
1 onion, finely chopped
2 tbsp finely chopped herbs
cooked peas or grilled tomatoes to garnish


1 Cook the rice in boiling salted water with the garlic until soft.
2 While the rice is cooking, heat the milk and stir in the cheese.
3 Cook slowly until the cheese melts. Add mustard, and a little
salt and pepper.
4 Beat the eggs, adding the onion, herbs, and finally the milk-cheese
mixture, as you beat.
5 Mix this with the rice and pour into a buttered loaf tin and bake
in a moderate oven, 350 degrees, for about 1 hour.
6 Garnish with peas or grilled tomatoes, and serve with a sauce.
