Rice and Mango Meringue Recipe


1 oz rice
1 pt milk
pinch of salt
1 oz sugar
2 eggs, separated
stewed mangoes
2 oz fine sugar


1 Wash rice and put in a saucepan with milk and pinch of salt.
2 Cook slowly until thick.
3 Let cool, then add the 1 oz sugar and egg yolks.
4 Mix well, pour into a buttered ovenproof dish and bake at 375 degrees
for 15-20 minutes until tender.
5 Arrange mangoes over rice mixture.
6 Beat egg whites stiffly with the 2 oz sugar.
7 Pile on top of mangoes and bake until slightly brown, for 15-20 minutes.
8 Serve hot.
