Split Peas Soup

Split Peas Soup


1/2 pt split peas
1/2 oz fat for frying
1 onion, sliced
a ham bone or bacon scraps
2 pt water or stock
8 oz eddoes or yam, diced


1 Heat fat, and saute onion lightly.
2 Add peas and fry lightly.
3 Add ham bone or scraps and stock and bring to simmering point. Cook until
  peas are tender.
4 Add more water if soup seems too thick, then add the diced root vegetables
  and salt and pepper to taste. Simmer for a further 10 minutes.
5 Serve hot.
