1 lb potatoes
1 pack sausage
1 lb liver
1 small onion, chopped
4 oz cheddar cheese
4 oz bread crumbs
1 Grate sausage then saute liver and sausage over medium heat until
2 Fry onions lightly, then add cheese and stir to melt slightly.
Combine mixture with liver, sausage, breadcrumbs and half the eggs.
3 Preheat the oven to 450 degrees. Slice a small piece from the bottom
of each potato so it has a flat base to sit on. Use a Mellon baller
to hallow out the potato, leaving the wall about 1/4 inch thick.
4 Combine scooped-out potato with filling mixture and remaining egg.
Mould filling into shell and arrange potatoes on baking sheet.
5 Bake for 15-20 minutes
