Sweet and Sour Chicken Recipe


1 chicken, 4 lb
1 clove garlic
1 small onion
1 tsp thyme
wiri-wiri peppers
1 tsp chopped celery
1 tbsp soy sauce
1 tbsp piquante sauce
2 tbsp vinegar
chopped eschalot and wiri-wiri peppers to


1 tbsp dark sauce
1/4 tsp salt
1 tsp black pepper
2 tsp vetsin
2 tbsp vinegar
2 tsp soy sauce
1/4 pt tomato ketchup
1 tbsp water
2 level tsp cornflour
3 tbsp chinese pickle, chopped
1 tsp chinese spice
1 small onion, chopped


1 Chop garlic, onion, thyme and wiri-wiri peppers.
2 Add chopped celery, soy sauce, piquante sauce, vinegar and salt to
taste to the chopped seasoning.
3 Clean chicken, cut into neat pieces and soak in mixture overnight or
for as long as possible.
4 Dry chicken in clean cloth, lightly dust with flour and fry until
5 Bring the first eight sauce ingredients to the boil.
6 Stir in the cornflour, blended with 1 tablespoon of water, and boil
for 2 minutes stirring continuously.
7 Add the pickle, spice and onion and heat through.
8 Place chicken in a casserole, add sauce and bake at 350 degrees for
about 40 minutes.
9 Garnish with chopped eschalot and chopped peppers.

Serves 16

Note: Sweet and sour pork or spare ribs may be done in the same way.
