1/2 oz margarine
1 oz bacon
1/2 oz flour
1 tbsp tomato paste
1 Cut onion into slices.
2 Put margarine and bacon in a saucepan and fry lightly.
3 Add onion and fry, then add tomatoes.
4 Bruise with a spoon and simmer for 4-5 minutes.
5 Stir in the flour and add the stock, tomato paste and salt and pepper.
6 Boil and skim.
7 Simmer slowly for 20 minutes stirring occasionally.
8 Pass through a sieve, correct colour and consistency.
