2 oz dry soybeans
1 pt tomato juice
3 oz onions, chopped
3 oz celery, chopped
1 bay leaf
4 tbsp oil
chopped parsley to garnish
1 Soak the soybeans overnight in 1 1/2 pints water.
2 Place the beans in a saucepan. Add the onion, celery, bay leaf, salt
and pepper, oil, and enough water to cover the beans.
3 Bring to the boil and simmer, covered, for 1 1/2 -2 hours or until
beans are tender.
4 Add the tomato juice to the pan and heat to boiling.
5 Season to taste with salt and pepper and garnish with chopped parsley.
